@markanstead: Red wine in hot weather can go wrong fast. Too warm, and the alcohol starts to dominate. The wine can taste heavier, harsher and less refreshing than it should. The easy fix? Give lighter reds a short spell in the fridge or ice box before serving. Not freezing cold. Not fridge-cold like white wine. A gentle chill is enough to bring the fruit back into focus and make the wine taste much better. Do you ever chill your reds, or does that still feel wrong?
