1 tbsp water
2 rice paper wrappers
Olive oil spray 1/2 avocado, smashed
2 jammy eggs, halved
1 tbsp chives, finely chopped
1 tbsp crispy shallots
Chilli oil, to serve Method 1. Whisk the egg and water together in a shallow bowl. 2. Dip one rice paper wrapper into the egg mixture until softened, then place on a clean surface. Repeat with the second wrapper and stack it on top. 3. Fold the rice paper stack in half to create a thick toast-like base. 4. Lightly grease a sandwich press with olive oil spray and preheat. 5. Place the folded rice paper onto the sandwich press and cook for 4–5 minutes, or until golden and crispy. 6. Transfer to a serving plate and top with the smashed avocado. 7. Arrange the jammy eggs on top, then scatter over the chives and crispy shallots. 8. Finish with a generous drizzle of chilli oil and serve immediately. #EasyRecipe #breakfast
