Cornmeal-dusted trout goes into the pan while a cast-iron pot of cornmeal porridge builds beside it, the cook reading both by sound and smell alone. The trout gets dragged through coarse cornmeal before it hits the fat, and the crust that forms is audible from across the yard. The cornmeal porridge takes time: constant work with a wooden paddle, the mass pulling away from the sides of the pot in long, reluctant ropes when it is ready. The raw garlic sauce is last, nothing but crushed garlic, oil, and water, and it lands on the plate like a fist. In Bucovina, this is not restaurant food.
