Honestly, these might be the prettiest potatoes I’ve ever made. 🤤 Save this recipe for your next dinner, party snack or cozy movie night! Ingredients For the potato roses: * 700 g potatoes * 60 g finely grated Parmesan * 3 tbsp olive oil * 1 tsp garlic powder * 1 tsp paprika * Salt and black pepper For the dip: * 200 g Greek yogurt * 1 small garlic clove, finely grated * 1 tsp Dijon mustard * Zest of ½ lemon * 1–2 tbsp chopped chives * Salt and black pepper How to make them: 1. Preheat the oven to 200°C / 390°F and grease a muffin tin. 2. Slice the raw potatoes very thinly, ideally around 1–2 mm thick. A mandoline makes this much easier. 3. Arrange the slices in long overlapping rows. Brush or drizzle them with olive oil, then add Parmesan, garlic powder, paprika, salt and pepper. 4. Carefully roll each row into a rose shape and place it inside the muffin tin. Add a few extra potato slices around the outside when needed to create fuller roses. 5. Cover the muffin tin loosely with foil and bake for around 30 minutes. Remove the foil and bake for another 20–30 minutes, until the potatoes are completely tender in the middle and deeply golden and crispy around the edges. 6. Mix the Greek yogurt, garlic, Dijon, lemon zest, chives, salt and pepper until creamy. 7. Let the potato roses rest for 5 minutes, carefully lift them out of the tin and serve them warm with the dip.
