Prepare the cake * Preheat oven to 325°F. * Grease and flour a Bundt pan. * In a large bowl, whisk together flour, cinnamon, nutmeg, baking soda, and salt. * In another bowl, beat the oil, granulated sugar, brown sugar, eggs, and vanilla until well combined. * Gradually add the dry ingredients to the wet ingredients. Mix just until combined. * Fold in the apples and pecans. 2. Bake * Pour the batter into the Bundt pan and smooth the top. * Bake for 60–70 minutes, or until a toothpick inserted into the center comes out clean. * Let cool in the pan for about 15 minutes, then turn onto a plate. Make the Caramel Glaze 1. Melt the butter in a saucepan over medium heat. 2. Add brown sugar and heavy cream. 3. Bring to a gentle boil, stirring constantly. 4. Boil for 2–3 minutes. 5.
