Reassemble the jalapeño halves and wrap each one in a strip of bacon. 	5.	Smoke Jalapeños: Place the wrapped jalapeños in a smoker set at 300°F. Smoke for 1-2 hours, or until the bacon is cooked. At the 1-hour mark, baste the jalapeños with a thin coat of peach preserves mixed with melted butter. 	6.	Serve: Remove the jalapeños from the smoker and let them cool slightly. Serve with buttermilk ranch dressing, optionally mixed with chopped jalapeño and cilantro.
