This is one of those impressive-looking dinners that tastes just as good as it looks. Servings: 4–6 Prep Time: 25 minutes Cook Time: 30–35 minutes For the Chicken: • 4 large boneless, skinless chicken breasts • 2 cups fresh spinach, chopped • 6 oz cream cheese, softened • 1 cup shredded mozzarella cheese • 1/3 cup grated Parmesan cheese • 2 cloves garlic, minced • 1/2 teaspoon garlic powder • 1/2 teaspoon onion powder • 1/2 teaspoon salt • 1/4 teaspoon black pepper For the Crispy Coating: • 1/2 cup all-purpose flour • 2 large eggs • 1 tablespoon milk • 1 1/2 cups panko breadcrumbs • 1/2 cup grated Parmesan cheese • 1 teaspoon Italian seasoning • 1/2 teaspoon paprika • 1/2 teaspoon garlic powder • Oil for browning For the Honey Garlic Glaze: • 1/3 cup honey • 1/4 cup soy sauce • 2 tablespoons brown sugar • 2 tablespoons butter • 3 cloves garlic, minced • 1 tablespoon apple cider vinegar • 1 teaspoon cornstarch • 1 tablespoon water For Garnish: • Chopped parsley or chives DIRECTIONS 1. PREPARE THE FILLING Heat a skillet over medium heat and add the chopped spinach. Cook for 2–3 minutes, just until wilted. Remove from the heat and allow it to cool slightly. In a bowl, combine the spinach, cream cheese, mozzarella, Parmesan, garlic, garlic powder, onion powder, salt and pepper. 2. PREPARE THE CHICKEN Butterfly each chicken breast by slicing horizontally almost all the way through, then opening it like a book. Place the chicken between sheets of plastic wrap and gently pound to about 1/4-inch thickness. Spread the spinach-and-cheese mixture evenly over each chicken breast, leaving a small border around the edges. Starting from one end, tightly roll each chicken breast around the filling. Secure with toothpicks if needed. 3. BREAD THE CHICKEN Place the flour in one shallow bowl. Whisk together the eggs and milk in a second bowl. In a third bowl, combine the panko breadcrumbs, Parmesan, Italian seasoning, paprika and garlic powder. Coat each chicken roll first in flour, then dip it into the egg mixture, then coat generously with the seasoned panko mixture. 4. BROWN THE CHICKEN Preheat the oven to 375°F. Heat a thin layer of oil in a large oven-safe skillet over medium-high heat. Add the chicken rolls and cook for about 2–3 minutes per side, turning carefully, until the coating is golden brown and crispy. 5. BAKE Transfer the skillet to the oven, or move the chicken to a baking dish. Bake for approximately 20–25 minutes, or until the chicken reaches an internal temperature of 165°F. Remove from the oven and allow the chicken to rest for 5–10 minutes before slicing. 6. MAKE THE HONEY GARLIC GLAZE While the chicken cooks, add the honey, soy sauce, brown sugar, butter, garlic and apple cider vinegar to a small saucepan. Bring to a gentle simmer over medium heat.
