PUMPKIN, FETA & CHICKEN RICE BAKE 🥘 Serve with garlic bread 🥖🤤 Ingredients 500g chicken mince 300g pumpkin, cut into small cubes 1 cup uncooked long grain rice (rinsed) 1¼ cups chicken stock 300ml cooking cream 150g feta, crumbled 2 cups spinach, chopped & added in the last 10 minutes Seasonings 2 tsp onion powder 2 tsp garlic powder 1.5 tsp dried oregano ½ tsp dried thyme Salt & pepper (to taste) 1 tsp Vegeta/chicken stock powder (optional) Topping 2-3 tbsp pine nuts 50g Feta Drizzle olive oil Method 1. Preheat oven to 180°C fan forced (200°C conventional) 2. Into a large baking dish add stock, cream, seasonings, rice (whisk well), then add pumpkin and chicken mince. 3. Ensure you break the mince up & mix everything well. 4. Cover tightly with foil & bake 50 minutes. 5. Remove foil, break mince up more if required, add spinach, stir well & top with pine nuts & remaining feta. 6. Bake for 10 minutes uncovered until the rice is cooked through & top is slightly golden! 7. Drizzle with olive oil & enjoy! Tip: If your rice is still slightly firm, add an extra ¼ cup stock and bake for 5 - 10 minutes longer covered. #simpl#simpledinnerslymeals
