@rubin_allergy: @Chef Sebastien Nortje Food allergies, celiac disease, intolerances and preferences all need to be taken seriously. #food #allergies #tiktokdoc #learnontiktokcontest
don't get me wrong we follow the procedure each time we get an allergy. but the amount of times someone has come to the restaurant I work at, which is a seafood place, that are allergic to seafood or shellfish is crazy.
I feel especially bad when it's a kid, they have no choice and their parents are playing with fire.

in culinary school (in 2006) one of the first safety practices we were taught was that you HAVE to take ALL allergies seriously. Period. Full stop

If you treat all allergy requests as real then you don't have to stop and wonder if they are. Simple.

My dad isn't "diagnosed" with a cucumber allergy but he projectile vomits and his throat closes up every time he has some... does that count?

As a mother of a child with anaphylaxis allergies to dairy, peanuts/treenuts, this both infuriates me and scares me to death.

People thinking gluten is bad for you has made things so much worse for celiacs.

So he doesn't take care when dealing with a potential allergy. Does that mean if someone has an allergic reaction to something he cooks they can use the video as evidence to show his lack of care?

I haven’t eaten in a restaurant for over 10 years. And this guy just proved me why I will continue to never again eat in a restaurant.

And that man right there is why I trust exactly one restaurant if it’s not a dedicated gluten free place. I’m not getting sick because you don’t want to believe my celiac disease is real

I work in industry. I don’t care why somebody doesn’t want something in their food. We will make it, however.

as a chef for 36 years, I totally disagree with him. I always make sure that I pay close attention to allergies. no one I know will ignore them because of the fear of lawsuits.

we have to assume ALL the allergies are real, and it's not our job to provide a second opinion diagnosis to customers. people should communicate more effectively and honestly, because preferences will be handled differently to allergies but we still have to take any reported allergy as the worst case allergy.

when I worked in fast food during covid, all staff started wearing latex gloves as instructed by corporate. a customer asked about it, saying she had a latex allergy and couldn't order from us. wanna know what we did? we all took the gloves off, washed our hands, washed the food prep area, anything that could cause an allergic reaction was either cleaned or temporarily replaced. we made her food, specially marked it, then we all put the gloves back on and continued as normal. it's not that hard to be compassionate, regardless if you believe it or not

Awful. When I worked in F&B, I would straight up asked "is this an allergy or a preference? Allergies are extremely serious and require a serious process. If you don't like an ingredient, no problem. We can always opt out the ingredient or I can suggest another dish." They always be honest by saying it's a preference. I think only a handful of times it was an actual allergy. Then I'd go to the kitchen and tell them "this is an actual allergy. Please be careful." The chefs thankfully take it very seriously. I'm glad I worked with chefs who actually care.

People actually do tell restaurants they are allergic to something because they don’t want it on their plate and “that will make them take it seriously” I see why he’s frustrated
