🎃 We all love halloween pumpkins but sadly as a result of the holiday people don’t really view pumpkins as food anymore :( and a monstrous number of pumpkins end up in the landfill each year - over 1 million pumpkins in Ireland and an estimated 22 million in the UK are wasted!! Food waste alone is estimated to haunt the planet with about 10% of global greenhouse gas emissions. So this halloween let’s try not contribute to this food waste and use up our pumpkins!! There’s so many delicious things you can do with your pumpkins and making pumpkin puree has got to be the simplest! This is such an easy recipe as you can see from the video and then you can keep the puree in the fridge for up to a week or freeze it for up to 3 months to make things like pumpkin pie, muffins, pancakes, scones… so many yummy things! 😋 My boys love any kind of pancake so I’m going to use mine to make pumpkin pancakes! Here is a recipe for you👇 Pumpkin Pancakes! 200g plain flour 2 tsp baking powder 1 tsp cinnamon ¼ teaspoon ground ginger Pinch of ground nutmeg 1 tsp vanilla extract 150g pumpkin puree 2 tablespoons maple syrup 50g butter, melted 240ml milk 2 eggs Method: 1. Mix together the flour, baking powder, cinnamon, ginger, and nutmeg in a bowl. 2. In a large bowl mix together the pumpkin puree and melted butter. Whisk in the milk, eggs, vanilla and maple syrup. 3. Add the flour mixture to the wet mix and whisk until smooth. If the batter seems too thick, add 1 to 2 more tablespoons of milk. 4. Heat a pan over medium heat and add a drizzle of oil. When hot pour the batter in rounds into the pan and cook until bubbling on top, then flip and cook until the bottom is golden, about another minute! 5. Serve with whatever you like!
