Ingredients: 1½ pounds sirloin steak, sliced thinly against the grain 1 red bell pepper, sliced 1 green bell pepper, sliced 1 yellow bell pepper, sliced 1 large white onion, sliced 4 cloves garlic, minced 1 tablespoon fresh ginger, grated ⅓ cup low-sodium soy sauce ¼ cup beef broth 3 tablespoons brown sugar, packed 2 tablespoons oyster sauce 1 tablespoon rice vinegar 2 tablespoons cornstarch, divided 3 tablespoons vegetable oil, divided 1 teaspoon black pepper, freshly cracked 2 tablespoons cold water Directions: Toss the sliced steak with 1 tablespoon of cornstarch and the black pepper. Set aside for 10 minutes. In a small bowl, whisk together the soy sauce, beef broth, brown sugar, oyster sauce, and rice vinegar. Set aside. Heat 2 tablespoons of vegetable oil in a large skillet over high heat. Add the steak in a single layer and sear for 1 to 2 minutes per side until browned. Transfer to a plate. Add the remaining tablespoon of oil to the skillet. Add the bell peppers and onion and stir-fry for 3 to 4 minutes until crisp-tender. Add the garlic and ginger and cook for 30 seconds. Pour the sauce mixture into the skillet and bring to a simmer. Whisk the remaining tablespoon of cornstarch with the cold water and stir into the sauce. Cook for 1 to 2 minutes until the sauce thickens and turns glossy. Return the steak to the skillet and toss to coat. Cook another minute to heat through. Serve immediately over rice.
