homemade thin mint cookies! they’re gluten free, dairy free, paleo, and refined sugar free, and so easy to make. if you like girl scout cookies, you have to give these a try! cookie ingredients: •1 1/4 cups almond flour •1/4 cup cocoa powder •1/8 tsp salt •3 tbsp maple syrup, room temp •2 tbsp coconut oil, melted •1/2 tsp peppermint extract coating ingredients: •6oz dark or semi sweet chocolate (i use dairy free and refined sugar free) •2-3 tsp coconut oil •1/4 tsp peppermint extract instructions: 1. add all of the cookie dough ingredients to a bowl and mix until a dough forms then place in the fridge to chill for 20-30 minutes. 2. once chilled, roll out the dough between 2 pieces of parchment paper. cut out little cookies with a circle cookie cutter or a small shot/juice glass. remove any excess dough and repeat until all of the dough is used up. i made the cookies about 1/4 inch thick. 3. bake the cookies on a tray lined with parchment paper for 8-10 minutes at 350F (don’t over bake, they burn easily!). once baked allow the cookies to cool.  4. once cooled, melt together the coconut oil and chocolate (in the microwave or on the stovetop using the double boiler method). once melted, add 1/4 tsp peppermint extract to the melted chocolate and mix well. 5. dip the cookies in the melted chocolate then place back on the lined tray. freeze or refrigerate until the chocolate hardens then dig in and enjoy! 6. store in the fridge or freezer (we prefer the cookies frozen!). #thinmints #girlscoutcookie #homemadethinmints #veganthinmints #healthycookies #healthythinmints #dairyfreecookies #glutenfreecookies #grainfreecookies #refinedsugarfree #healthydessert #refinedsugarfree #girlscoutcookieseason
