these are similar looking but completely different phenomena. the sodium acetate is not freezing, it is crystallizing by precipitating out of solution.

All are technically wrong.
The heat pack (sodium acetate one) is actually super saturated, but the lack of nucleation sites make it where it doesn't solidify, it why you have to heat it to liquify it again.
The second one is the same thing, but in the way most people are introduced to "hot ice" by pouring it on something that can allow for nucleation.
The last one is a way to do an actual supercooled water thing, however the problem here can be if there's so much as a single nucleation site, it goes belly up the first moment it can.

Not fake I had a couple of these when I was younger and you put them in the microwave to reset them. I showed one to a chemistry tutor I had who used to be a professor at a university and she couldn’t explain it.
