What you need for this recipe: • 2 large apples or 3 small apples, peeled and chopped — about 2 cups / 350–450 g • 3 eggs • 3 heaping tablespoons Greek yogurt — about 1/3 cup / 80–90 g Optional: • 1/2 teaspoon cinnamon • a little vanilla • lemon zest Instructions: 1. Preheat the oven to 350°F / 175°C. 2. Peel and chop the apples into small pieces. 3. Add the apples to a food processor and pulse until they are very finely chopped, but not completely puréed. 4. Add the Greek yogurt and eggs, then blend again just until everything is combined. 5. Pour the mixture into a small baking pan lined with parchment paper. I used a 6-inch pan. 6. Bake for about 40-45 minutes, or until the center is set and the top looks lightly golden. 7. Let it cool completely before slicing.
