im a big fan of what i’ve seen called chow bowls. As a neurodivergent person, food prep sucks. So if I’m able to cook a batch of food that will last the week? Amazing. Chicken, rice, beans, bell pepper, corn, cucumber, and some sort of sauce if I’m feeling up for it.

what I make all the time is like a dense bean salad 😭🙏 canned chickpeas (and usually one more bean) pickled beets, chop cucumbers, jar lupini beans, hemp hearts, sometimes a fruit like strawberry and dressing is just a bunch of balsamic vinegar and olive oil
