Chorizo Gnocchi Fajita Traybake  The first thing that I need to tell you is that this is the best dinner I've had this year...and I'm not even the biggest fan of gnocchi! The flavour of the fajita spice and the roasted vegetables and smokey chorizo is just RIDICULOUSLY good...and the best bit is that you just chuck it all in the same pan and roast it! My brand new cookbook Speedy 10 is going to be out soon and I am genuinely so chuffed with the 100 dinners that are in there. If you like my recipes, I think you're going to love it 🥹 I have written up the recipe below, the link to pre order speedy 10 is in my bio, Amy x Feeds 4 1 red pepper cut into medium pieces 1 yellow pepper cut into medium pieces 1 red onion cut into medium piece 10 fresh baby or cherry tomatoes 225g chorizo ring thickly sliced 650g ready-made gnocchi 30g packet fajita mix 4 tbsp Olive oil 5 slices of burger cheese 30ml Milk Paprika Heat the oven to 200C fan  Place the chopped peppers and onion in a roasting tin with the tomatoes  chorizo and gnocchi. Add the fajita mix to a small bowl. Stir in the olive oil until you have a smooth runny paste. Roast in the oven for 30 minutes, turning the mixture over once or twice. 5 Minutes before the traybake is due out of the oven, make the nacho sauce. Tear the cheese slices into 3 or 4 pieces and place them in a microwave proof bowl. Add the milk. Microwave for 1 minute, stirring once halfway through. Stir until smooth. When the gnocchi and veg are roasted, remove them from the oven and season with salt and pepper.  Turn them over until coated in the chorizo oil.  Drizzle with the nacho sauce before serving with salad and tortillas. #traybake #fajitanight #gnocchi
