A dreamy recipe for you all, prawn and pork wonton soup! Episode 3 of Good Soups, recipe below as always - hope you enjoy 🍜  Serves 4 Note: this recipe makes 50 wontons. To freeze, lay the uncooked wontons individually on a tray and freeze for 30 minutes, remove from tray, distribute between ziplock bags and pop back in the freezer  For the wonton filling: 3 garlic cloves 10g ginger 30g chives 1 spring onion 110g prawn 400g pork mince (20% fat) 1/2 tsp salt 1/2 tsp ground white pepper
1 tsp white vinegar 
1 tbsp sesame oil, oyster sauce, black vinegar + cornstarch 
1 egg
 For the broth:
1.2L water 15g ginger 2 tbsp chicken bouillon powder
1/2 tsp dashi
1 tsp ground white pepper
1 tbsp light soy sauce + sesame oil

50 wonton wrappers 400g noodles
200g pak choy 4 tbsp crispy shallots, to serve 1 spring onion, to serve 4 tsp Mama Yu Original Chilli Oil @Mama Yu, to serve 
Mince the garlic and ginger. Thinly slice the garlic chives and spring onions, then finely chop the prawns. Add everything to a bowl along with the pork mince, seasonings, sauces and egg, mix well until fully combined. Lightly wet two adjacent edges of a wonton wrapper with warm water. Place a tsp of filling in the centre of the non-floury side, then fold one corner over to form a triangle, press firmly to seal. Create small pleats and squeeze to seal, making sure the wontons are plump in the middle. Keep the folded wontons covered with a lightly damp cloth to prevent them from drying out. Bring a pot of water to a boil. Add 8 wontons and gently stir to prevent them from sticking to the bottom. Cook for 3-5 minutes, or until they float to the surface, then boil for an extra minute. Remove and rinse under cold water to prevent sticking. Freeze any remaining uncooked wontons (see note). In another pot, cook the noodles according to packet instructions. Drain and rinse under cold water to prevent sticking. For the broth, add water to a large pot over medium heat along with the ginger. Add the seasonings and stir well, allowing the broth to gently simmer. Blanch the pak choy in the pot for 30 seconds and remove. Divide the noodles, wontons, pak choy and broth between four bowls.
