Ingredients Chicken - 1.5–2 lbs chicken wings - 1 tbsp neutral oil - 1 packet sazon - 2 tsp Fire and Smoke Society Honey butter jalapeño seasoning - 2 tsp garlic powder - 2 tsp onion powder - 1 tsp complete seasoning  - 1 tsp paprika  - 1/2 tsp msg (optional) - Salt & pepper, to taste - 1/2 cup jalapeño juice  - 1 cup cornstarch - Canola oil, for frying - Splash of club soda Honey Jalapeno Sauce - 1/3 cup jalapeño juice - 1/2 cup honey - 2 tbsp butter - 1 tbsp brown sugar - 1 tsp Fire and Smoke Society honey butter jalapeno seasoning  - Slice jalapeños  - Salt, to taste Ranch - 1 cup mayonnaise - 1 cup sour cream - 1 cup buttermilk - 1 packet ranch seasoning - 1/4 cup fresh dill, finely chopped - 2 tbsp chives, chopped - 2 tsp garlic powder - 1 tsp garlic paste - Salt & pepper, to taste - Splash of jalapeño juice Instructions - Pat the wings completely dry with paper towels and place them in a large bowl. - Add the neutral oil, sazon, Fire & Smoke Society Honey Butter Jalapeño seasoning, garlic powder, onion powder, complete seasoning, paprika, salt, pepper, msg, and 1/2 cup jalapeño juice. Toss until every wing is evenly coated. - Cover and marinate for at least 3 hours, or overnight for the best flavor. - Once marinated, pour off most of the excess marinade, leaving just a little behind to help the coating stick. - Add the cornstarch and a small splash of club soda. Toss until the wings are evenly coated. Let them rest for 10–15 minutes while the oil heats. - Heat canola oil to 350°F (175°C). - Fry the wings in batches for 8–10 minutes, turning occasionally, until deeply golden, crispy, and the internal temperature reaches 165°F. Transfer to a wire rack to drain. Sauce - In a small saucepan over medium-low heat, combine the 1/3 cup jalapeño juice, honey, butter, brown sugar, Fire & Smoke Society Honey Butter Jalapeño seasoning, sliced jalapeños, and a pinch of salt. - Stir until the butter has melted and the sauce is smooth and slightly thickened, about 3–5 minutes. Remove from the heat. - Place the hot fried wings in a large bowl. - Pour the honey jalapeño sauce over the wings and toss until every wing is evenly coated.
