Mix turmeric, chili powder, cumin powder, and salt. Rub onto both sides of the eggplant slices. 2. Let sit for 10–15 minutes. 3. Shallow fry until golden brown and soft on both sides. 4. Whisk yogurt with salt and roasted cumin powder. 5. Arrange the fried eggplant slices on a serving plate. 6. Spoon the yogurt over the slices. 7. Masala doesn't really gets to cook and also aubergine or brinjal soaks up alot of oil to fry so basically it's not healthy meal it's good for curry only not frying
