This is my Blueberry Coffee Cake that’s unbelievably soft and fluffy, layered with homemade blueberry jam, juicy fresh blueberries, and finished with a buttery crumble on top… the perfect cozy slice to enjoy with your coffee 🫐  ✨ Ingredients Cake Batter 	•	360 g all-purpose flour, sifted 	•	1½ tbsp baking powder 	•	¾ tsp salt 	•	1½ tsp cornstarch 	•	90 g brown sugar 	•	90 g white sugar 	•	170 g unsalted butter, softened (not melted) 	•	75 g oil 	•	3 eggs + 1 egg white 	•	2 tbsp vanilla extract 	•	90 ml milk 	•	100 g Greek yogurt 	•	160 g fresh blueberries, diced Homemade Blueberry Jam (for center) 	•	200 g fresh blueberries 	•	40 g sugar 	•	Juice of ½ lemon 	•	1 tsp cornstarch Cook until thick. Let cool completely before using. You’ll need about 170 g of thick jam. Cream the butter and sugars In another bowl, beat the softened butter with the white and brown sugar until light and fluffy. 	6.	Add the eggs Mix in the eggs one at a time plus the extra egg white. Add the vanilla extract. 	7.	Add the wet ingredients Mix in the milk and Greek yogurt until fully combined. 	8.	Incorporate the dry ingredients Add them gradually and mix until a smooth batter forms. 	9.	Add the blueberries Toss them with 1 tablespoon of flour and gently fold into the batter. 	10.	Assemble the cake 	•	Pour all the batter into the prepared pan 	•	Add extra blueberries and spoonfuls of jam on top 	•	Use a toothpick or knife to gently create a swirl (do not overmix) 	11.	Add the crumble Sprinkle evenly over the top. 	12.	Bake Bake for 45–55 minutes, or until a toothpick inserted comes out clean (a little jam is okay, but no raw batter). 	13.
