Pappardelle alla Bolognese 🇮🇹 Ingredients: 1 lb @pastagarofalo Pappardelle 6 oz pancetta, cubed 1 knob of butter 1 medium onion, finely diced 2 carrots, finely diced 2 celery stalks, finely diced 1 lb ground beef 1 lb ground pork 1 cup dry white wine 2 tbsp tomato paste 2 cups tomato passata 2 cups vegetable stock 2 bay leaves Salt & black pepper Pinch of nutmeg 1 cup whole milk, warm Instructions: 1. Render the pancetta over low heat (no oil needed). 2. Add the butter and soffritto (onion, carrot, celery). Cook for 10 minutes until soft. 3. Add the beef and pork. Brown the meat well, seasoning with salt and pepper. 4. Deglaze with the white wine and let it fully evaporate. 5. Stir in the tomato paste and cook for 2 minutes. 6. Add the tomato passata, vegetable stock, and bay leaves. Stir well. 7. Simmer on very low heat for 2 hours, stirring occasionally. 8. Stir in the warm milk and a pinch of nutmeg. Cook for another 30 minutes. 9. Cook @pastagarofalo Pappardelle until al dente and toss it right into the sauce.
