I think it’s regional or maybe even depends on the city but for example in southern Sardinia most people say aqua gassata instead of frizzante like I commonly heard in Tuscany when I lived there for years. Of course they understand both but here they will often repeat back aqua gassata when I say frizzante

Might be more of a regional thing. To me "acqua liscia" sounds a bit old fashioned, like something an older person would say. In other parts of Italy it's probably a common expression though.

Liscia is used everywhere,maybe not everyone use it but it's definitely correct. There wss a famous advert from Ferrarelle (famous Italian water brand) that used to say "Liscia, Gassata o Ferrarelle". That because Ferrarelle is a water less carbonated than the usual acqua frizzante in Italy. Because is naturally carbonated not CO2 added.

liscia isn't used everywhere, I mean people will probably understand you even in places where it's not used but yeah it's not universal
