Day 24 of 30 Day High Protein Recipes: TAIWANESE DAN BING (EGG BREAKFAST PANCAKE). This recipe makes 2 servings. Ingredients: ½ cup all purpose flour 2 tsp tapioca starch 2 tsp cornstarch pinch of salt ¾ cup cold water 1 green onion, chopped cooking oil 4 eggs Toppings: ham slices mozzarella cheese or cheddar cheese, shredded Other toppings: corn, bacon, pork floss, sausage Sweet soy sauce or chili sauce, to drizzle on top Instructions: 2. In a bowl, add flour, tapioca starch, cornstarch, salt, and water. Whisk together until smooth. Then stir in chopped green onions. The consistency should be like a thin pancake batter. 2. Heat a non-stick  pan with cooking oil over medium heat. Pour a ladle of batter in the pan and swirl in a circular motion to coat the bottom evenly, like a thin crepe. Cook for 1-2 minutes until. Flip over and cook the other side for another 1-2 minutes. Transfer the cooked pancake and set aside. 3. Whisk two eggs in a bowl. Pour the eggs in the same pan. While the egg is still slightly runny, place the pancake on top of the egg and cook for 1-2 minutes until set. 4. Flip the egg pancake combo over so now the egg side is facing up. Add shredded cheese and ham slices, or any of your preferred toppings. 5. Use a spatula to fold the dan bing. Transfer to a cutting board and cut into small pieces. 6. Drizzle with sweet soy sauce, chili sauce, or your favorite sauce on top.
