CAKE: 1 stick unsalted butter, softened 1 cup white granulated sugar Zest of 1/2 a lemon 1/4 cup Greek yogurt or sour cream 1/8 tsp almond extract 1 tsp vanilla extract or paste 2 eggs 1 1/4 cup plus 2 tbsp all purpose flour 1 3/4 tsp baking powder 1/2 tsp salt 1/2 cup milk 1 1/2 cups blueberries + *1 tbsp all purpose flour TOPPING: ~ Stick butter cut into a panel and then into strips *(see video)* 1/4 cup turbinado sugar, for topping . Preheat your oven to 350 degrees Fahrenheit. Thoroughly grease a standard loaf pan with oil or cooking spray and line with parchment, leaving overhang for easy release of the cake. In the bowl of a stand mixer (or in a large bowl with a hand mixer), cream together the butter and sugar. Add lemon zest, yogurt, and extracts then mix. Add eggs one at a time, mixing after each addition until smooth. Scrape down the sides of your bowl to be sure all ingredients are incorporated. In a separate bowl, whisk your flour, baking powder, and salt. Add 1/2 of the dry mixture to the butter mixture and mix to combine. Add the milk and mix to combine. Finish on the rest of dry mixture. In a small bowl coat your blueberries in the additional tbsp of flour to coat them. Using a spoon or spatula, gently fold the coated blueberries into the cake batter. Transfer the batter to the prepared pan. Add a line of butter strips down the middle of the loaf (see video for reference) and cover the surface with a layer of turbinado sugar. Bake for 45-50 minutes or until the top is golden brown and crackly and a toothpick inserted comes out with a few moist crumbs. Release the cake from the pan with an offset spatula and use the overhang of parchment to lift the loaf from the pan. Slice and enjoy. . #blueberry #cake #loaf #Recipe
