@georgiaexley_: Tomato & Prawn Spaghetti 🦐 Full of all of those summer flavours, and ready in under 20 minutes! 518 calories | 38g protein Ingredients 75g raw prawns 60g uncooked spaghetti 100g baby plum tomatoes, halved 1/2 courgette, cubed 1/2 red onion, diced 1 garlic clove, minced 20g parmesan 1/2 lemon, juiced handful fresh parsley 1 tsp oregano 1/2 tsp paprika 1/4 tsp chilli flakes salt & pepper low calorie cooking spray 1. Add the spaghetti to a pan with boiling water and cook for around 12 minutes. 2. Meanwhile, add the onion, courgette, garlic and the tomatoes (leaving a few halves to one side for the end) to a pan with the cooking spray, season with salt and pepper and leave to soften. 3. Once the veg has started to soften, add in the chilli flakes and oregano and a splash of pasta water to make a sauce. 4. In a separate pan, cook your prawns until cooked through - this will only take a few minutes - whilst seasoning with the paprika and salt and pepper, then add to the pan with the veg (keep a few to one side for the end). 5. Combine the veg and the prawns before adding 3/4 of the parmesan - combine fully. Keep adding pasta water if needed to loosen. 6. Once the spaghetti has cooked, add to the pan with the rest of the ingredients and mix until fully coated. 7. Time to plate. Add to a bowl, top with the remaining parmesan, tomatoes and prawns as well as a sprinkle of parsley and a squeeze of lemon juice. Enjoy! #prawnpasta #prawns #summerfood #EasyRecipes #pastarecipes
