They were meant to be good fairies and not good nannies, and considering the situation they probably never dealt with that kind of situation and is probably another type of fairy than whatever Maleficent is. That's the point of the movie, that Maleficent is the one that genuinely loves Aurora regardless of what she is and what she's for

I wasn't really a big fan of the 3 fairies being a bit incompetent.. HOWEVER, them being incompetent is what led Maleficent to secretly take care of Aurora through the years, which resulted in Maleficent developing parental love for Aurora and save her life in the end. So while it's irritating, it's still fitting for the story they wanted to tell
