@thesapor: Street corn steak salad paired with @wildwonder Blackberry Violet prebiotic & probiotic drink for the perfect lunch โจ Fruity, floral, and inspired by herbal tonics passed down through generations, Blackberry Violet is where grandmaโs herbal wisdom meets a California produce stand ๐ #wildwonderpartner Ingredients Steak - 2 lbs flat iron or skirt steak - 1/4 cup orange juice - 1 tbsp olive oil - 2 tsp chipotle powder - 2 tsp ground cumin - 2 tsp garlic powder - 2 tsp onion powder - 1 tsp dried oregano - 1 tsp paprika - 1 tsp complete seasoning - 1 tsp carne asada seasoning - Salt, to taste Street Corn - 1 (16 oz) can whole kernel corn, drained - 1 tbsp butter - 3 tbsp mayonnaise - 3 tbsp sour cream - 2 tbsp chopped cilantro - 1/2โ1 tsp Tajรญn, or to taste - 1/2 tsp garlic powder - 1/4 cup crumbled Cotija cheese - Juice of 1 lime - Salt, to taste Salad - 5โ6 cups arugula - 1โ2 tbsp olive oil - Salt, to taste - 1 small red onion, thinly sliced - 1 cup grape tomatoes, halved - 1 avocado, sliced - 1/4 cup crumbled Cotija cheese - Chipotle ranch, for drizzling Instructions - In a large bowl, combine the orange juice, olive oil, chipotle powder, cumin, garlic powder, onion powder, oregano, paprika, complete seasoning, carne asada seasoning, and salt. Add the steak and coat well. Marinate for at least 30 minutes, or up to overnight for the best flavor. - Heat a cast iron skillet or grill over medium-high heat. Cook the steak for 3โ5 minutes per side, depending on thickness and desired doneness. Transfer to a cutting board and let rest for 10 minutes before slicing thinly against the grain. - While the steak rests, melt the butter in a skillet over medium-high heat. Add the drained corn and cook for 6โ8 minutes, stirring occasionally, until lightly charred. - Transfer the corn to a bowl and let cool for a few minutes. Stir in the mayonnaise, sour cream, cilantro, Tajรญn, garlic powder, Cotija cheese, lime juice, and salt.
