It started before Souls even. The idea of trees, especially the erdtree, most likely comes from a previous the Fromsoft game Shadow Tower Abyss. STA features, and takes place in, a giant plant/ tree organism that arrived from space that acts a parasite, who creates a cycle of monarchs to survive. The heart of this tree being called 'The Great Will'. One for one taken for Elden ring.

I'm pretty sure it has to do with the berserk influences. now, keep in mind, I haven't read the manga in a hot minute but one of the major villains of one of the arcs, Ganishka, if I remember correctly, was this super powerful apostle of the godhand that has an enormous true form and, when he was cut down, he became sort of a tree of life that connected the real world with the magical world. so yeah, I think that's where the whole tree thing took root from
