As well as being a wonderful metaphor for Dutch's role as a narcissistic con-man, I think that moment was more-so placed to show that the cycle keeps repeating, and he will never truly escape it. There is no finish line for him, because he refuses to, or doesn't know how to stray from the path. He's used the same old lines, and the same old tricks, never going anywhere. It shows how linear Dutch is.

To me, it always showed me that Dutch was making that call because he would rather die than surrender. He didn’t know for sure that him and Arthur would survive the fall. They were lucky they did.

I personally took it as dutch was thinking of arthur in his final moments dutch was crazy from brain damage and manipulation which left him with nobody and all he had left was memories to cling to so he clunf to the memory of arthur
