This lasagna skillet has become one of those meals that I keep coming back to all summer long because it checks every single box. It comes together in one pan, the whole family devours it every time, and it reheats beautifully which means lunch the next day is already handled too. We're talking seasoned ground beef, crushed tomatoes, bow-tie pasta cooked right in the pan, and a ricotta and cottage cheese mixture spooned over the top and broiled until the mozzarella is golden and bubbly. It tastes like you spent way more time on it than you actually did. 🧀 This is the kind of dinner that feels special enough for a sit down family meal but simple enough for a busy Tuesday night and in the summer, that balance is everything. One pan. 30 minutes. Zero complaints at the table. That's the kind of dinner I'm here for all season long. 🌿 Lasagna Skillet Servings: 6 | Total Time: 30 minutes Ingredients: 2 lbs ground beef ½ Tbsp avocado oil ½ medium yellow onion, finely diced 3 cloves garlic, minced 2 tsp garlic powder 2 tsp onion powder 1 tsp kosher salt, divided ½ tsp black pepper 24 oz crushed tomatoes 2-3 cups chicken broth 12 oz bow-tie pasta, uncooked ½ cup chopped fresh spinach ¼ cup chopped fresh basil ½ cup cottage cheese (or more ricotta) 1 cup ricotta cheese 1 egg ½ cup grated Parmesan cheese 1½ cups shredded mozzarella cheese 2 Tbsp chopped parsley, for garnish Directions: 1. In a large, deep oven-safe skillet with a lid, heat oil over medium-high. Add ground beef, 1 tsp garlic powder, 1 tsp onion powder, and ½ tsp salt. Cook until browned and crumbled. Drain excess grease if needed. 2. Add diced onion and garlic to the pan and cook for 2-3 minutes until softened and fragrant. 3. Add crushed tomatoes, chicken broth, remaining garlic and onion powder, basil, and bow-tie pasta. Stir well to combine and bring to a gentle boil. Reduce heat to medium-low, cover, and simmer for 15-18 minutes, adding more chicken broth if needed, and stirring occasionally, until pasta is tender and liquid is mostly absorbed. 4. In a bowl, combine cottage cheese, ricotta, egg, Parmesan, spinach, and remaining ½ tsp salt and black pepper. Mix well. 5. Spoon dollops of the cheese mixture across the top of the cooked pasta. Sprinkle with mozzarella cheese. 6. If oven-safe, place the skillet under the broiler for 2-3 minutes until the mozzarella is melted and golden. 7. Top with parsley and extra fresh basil.
