Old dish soap used to have lye in it and would destroy cast iron but modern soap doesnt have lye and is safe for cast iron but will take off your seasoning so re season it as soon as its dry!

On your stainless steel pans, i highly recommend Kleen King stainless steel clearer. Sprinkler it on, add a splash of water to make it a paste and then wipe/scrub it with just a paper towel. My mom’s pans all look brand new and they’ve all been heavily used for 20+ years

cast iron can handle dish soap regularly. the "no soap on cast iron" rule is a holdover from when lye was used in pretty much every soap. that is no longer the case and any dish soap you get from the grocery store is going to be free of lye. so you can be confident that using it on cast iron every time you cook is completely safe for the seasoning

You WANT your sheet pans to develop patina! They perform better. I too keep the stainless pots & pans spotless, but it’s a character flaw i.e. “these are tools, not kitchen jewelry.”

your cleaning routine is exactly the way I do mine except I use soap in my cast-iron pans a little more often and they’re perfectly seasoned for 30 years now, but my leg say I love barkeepers friend it keeps in pristine condition

Laughing a bit here in Oslo. My more than 40 years old steel pan get spotless using some vinegar. Aluminum we were told to throw away in the mid 1970’s ! because they weren’t good for cooking
