Chipotle Beef Bowl 🌶️ Beef ingredients (2 servings): 350g 5% fat beef mince 1 tbsp chipotle paste 1 tbsp tomato paste 60ml water 1/2 tsp cumin 1 tsp smoked paprika 2 garlic cloves Salt Black pepper Juice of 1/2 lime Ingredients (potatoes): 400g potatoes 1 tsp smoked paprika 1/2 tsp cumin 1 tsp garlic powder Salt Ingredients (salsa): 3 tomatoes 1 red onion Handful coriander Juice of 1/2 lime Salt Ingredients (sauce): 2 tbsp 0% fat Greek yogurt 2 tbsp low fat sour cream 1 tsp chipotle paste Juice of 1/2 lime 1/4 tsp garlic powder 1/4 tsp onion powder 1/4 tsp smoked paprika Salt ——— Method: 1. Chop the potatoes into cubes and place into a bowl. Spray with some oil, then season with smoked paprika, garlic powder, cumin and salt. Transfer to your air fryer and cook at 200 degrees celcius for 20 minutes, shaking halfway. They should be crispy and cooked through, if not, cook a little longer. 2. Dice the tomatoes and red onion. Place into a bowl and mix with chopped fresh coriander, lime juice, and salt. 3. For the sauce, mix the yogurt, sour cream, chipotle paste, lime, garlic powder, and salt. Place into the fridge to chill. 4. Heat a pan over medium-high. Add a little oil, then the mince, and cook 4–5 minutes, breaking it up. Stir in chipotle paste, tomato paste, cumin, paprika, grated garlic, salt and pepper. Cook for 1 minute, add the water and cook for another minute. Finish with a squeeze of lime juice. 5. Serve the chipotle beef with the crispy potatoes and salsa on the side. Drizzle the sauce on top and garnish with fresh coriander. Then enjoy, lovely! #chipotle #beef #weightlossfood #DinnerIdeas
