@ranasmag: Peach & tomato Panzanella Salad✨ 500g mixed ripe tomatoes 500g peaches Sea salt Sourdough bread or baguette Extra-virgin olive oil 1 small shallot or red onion, minced 1 garlic clove, minced 1 tsp Dijon mustard 2 tbsp white wine vinegar or red wine vinegar Freshly ground black pepper Fresh basil leaves 1.Preheat the oven to 160 c Toss bread cubes with olive oil, salt and pepper. Bake about 10 minutes, until crisp and firm but not browned. Remove from oven and let cool. 2.Place chopped tomatoes in a colander set over a bowl and season with 2 tsp salt. Set aside at room temperature to drain, tossing occasionally. Drain for a minimum of 15 minutes. 3.Remove colander with tomatoes. Add shallot, garlic, mustard, and vinegar to the tomato juice. Whisking constantly, drizzle in remaining 1/2 cup of olive oil. Season dressing to taste with salt and pepper. 4.Combine tomatoes, peaches, basil leaves toasted bread and dressing in a large bowl. Toss everything to coat and season with salt and pepper. Add burrata, olive oil and salt❤️ #salad #panzanellasalad #tomatoes
