CANNING PEACHES 🍑 INGREDIENTS 12lbs yellow flesh peaches peeled, pitted, and sliced 2 1/4c sugar 5 1/4c water Makes about 8-10 pints or 4-5 quarts INSTRUCTIONS In a stainless steel saucepan, combine sugar and water. Bring to a boil over medium high stirring until sugar is dissolved. Reduce heat and keep warm. Prepare canner jars and lids. One layer at a time, add your sliced peaches to the saucepan with your light syrup. Heat the peaches through over medium heat, gradually adding more. Using a slotted spoon, pack hot peaches into hot jars with a generous 1/2 inch of headspace. Ladle hot syrup into jar to cover peaches leaving 1/2 inch of headspace. Remove air bubbles and adjust headspace. Wipe rim. Center lid on jar. Add ring and screw on fingertip tight. Place jars in canner ensuring they are covered by at least 1 inch of water. Bring to a boil and process pint jars for 20 minutes and quart jars for 25 minutes, adjusting for altitude. Remove lid, wait 5 minutes then remove jars cool and store. #homemade #peaches
