CHEESY BEANS ON TOAST 😝🤞🏼 an easy, healthy, high protein (and fibre) breakfast idea for you all 🥹✨ beans: 200g cherry tomatoes, halved 200g mutti tomato sauce (with parmesan) 1 red pepper, finely chopped 1/2 red onion, finely chopped 1 can cannelloni beans 1 tsp garlic paste 2 tbsp tomato purée 1/4 tsp smoked paprika 1/8 tsp cumin Pinch basil Pinch oregano Pinch chilli flakes 2.5 cap fulls of white wine vinegar 250-300ml water (from the pasta sauce jar) Salt, pepper Fresh parsley To top: 1 tbsp chopped parsley or coriander Salt and black pepper reduced fat cheese Serve with: 2 x slices toast Method Add the onion, pepper, garlic paste, tomato purée, smoked paprika, cumin and chilli flakes, to a pan with a little spray oil and cook for 1 minute until softened. Add the tomatoes with a pinch of salt and pepper, and about 1-2 cap fulls of white wine vinegar. Add your beans, and cook for 6–8 minutes until the tomatoes break down and everything turns into a thick, rich sauce. If it gets too thick, add a small splash of water. To serve, toast your bread. Top with your beans and a good grating of cheese. Done!! #highproteinbreakfast #highproteinmeal #easymeal
