Added Stretch & Folds I’ve been curious to try adding in a few stretch and folds to see if it would make any difference. So I asked @arabellasourglow for her process to try. The only thing is, I forgot to put it in the refrigerator before I went to bed and it over proofed! So two of the three batches of dough became focaccia. The other one, I thought what the hell let me just try and see how it bakes up. It was a complete blob that I could barely shape & literally just threw it onto my parchment paper. I was actually surprised! This had to be my best rise and softest bread! It’s just nice to know that if I don’t have the time, it’s not necessary and it will still turn out great. But if I do have the time, it will add just a little something to my bread!
