Whether you grow your own or grab them from a local farmers market, this simple recipe is one of my favorite ways to preserve the harvest. ⚠️ DISCLAIMER ⚠️ It is generally not recommended to vacuum seal pickles. However, this is the method I personally use and feel comfortable with due to the high vinegar content of the recipe. For years I used the open-kettle method, and my pickles still ended up mushy. I also don’t typically store pickles for extremely long periods of time—they tend to disappear pretty quickly around here! If you would prefer to follow a tested canning method, simply prepare the recipe exactly as shown and process the jars in a water bath canner for 10 minutes. If you want to do something other than quick pickles then I recommend low temp pasteurization! USDA approved method and they are the crispiest pickles ever!

I do low temp sous vide pasteurization with my pickles. 150 degrees for 3 hours and they can perfectly! Come out so crunchy and I cut them on the thick side
