Omani Shuwa (Slow-Cooked Spiced Meat) 🇴🇲 A rich and deeply flavorful traditional dish, marinated overnight and cooked to tender perfection 🌿✨ Ingredients: • Large cut of meat (slightly scored) • Banana leaves • Roasted spices: cumin seeds, coriander seeds • 1 tbsp mixed spices • Salt & crushed red pepper 🌶️ • Garlic • White vinegar First, toast the cumin seeds in a hot pan until fragrant, then set aside. In the same pan, toast the coriander seeds. Let them cool, then grind each separately. In a bowl, mix the ground cumin, ground coriander, garlic, mixed spices, crushed red pepper, and vinegar until you get a medium consistency (not too thick or too thin). Marinate the meat with the mixture and leave it overnight in the fridge to absorb all the flavors. The next day, line an electric pressure cooker with banana leaves, place the meat inside, cover it with more banana leaves, seal, and cook for about 1.5 hours.
