Ingredients: - 14 oz (400g) firm tofu, pressed and cubed - 2 cups broccoli florets - 1 large carrot, sliced - 1 red bell pepper, sliced - 2 tablespoons vegetable oil - 3 cloves garlic, minced - 2 tablespoons soy sauce (low sodium) - 1 teaspoon sesame oil (optional) - 1 teaspoon ginger, grated - 1/2 cup water or vegetable broth - Salt and pepper to taste Instructions: 1. Press the tofu to remove excess moisture, then cut into cubes. 2. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. 3. Add tofu cubes and cook until golden brown on all sides, about 5-7 minutes. Remove and set aside. 4. In the same pan, add the remaining 1 tablespoon of vegetable oil. Sauté garlic and ginger until fragrant, about 30 seconds. 5. Add broccoli, carrot, and bell pepper to the pan. Stir-fry for about 5 minutes until vegetables are tender-crisp. 6.
