Honey Chipotle Fajita Chicken Sliders We love having a cheeky fajita night when we want a quick & easy dinner and these take it up a notch 🤭. Toasted buns are loaded with chipotle honey glazed chicken with melted cheese, charred peppers & onions and chipotle mayo 🤌🏼 Save this one for your next fajita night 📌🔥 Ingredients (makes 4): Sticky chipotle chicken 350g chicken breast, diced  Salt Black pepper 1 tsp fajita seasoning 1 tsp smoked paprika 1 - 1 & ½ tsp chipotle paste 25g honey 1 tsp lime juice  Veggies: 1 small red pepper, finely sliced 1 small green pepper, finely sliced 1 small red onion, finely sliced 1 tsp fajita seasoning Chipotle mayo 50g lighter mayonnaise ½ tsp chipotle paste 1 tsp lime juice To assemble 4 brioche burger buns 4 mozzarella cheese slices  8 jalapeños (optional)  20g tortilla chips roughly crushed  💞Fry the peppers until softened. Season with the fajita seasoning, toss until charred then remove from the pan. 💞Season the chicken with the fajita seasoning, paprika, salt and black pepper. 💞Add the chicken to the same frying pan and fry until cooked. Add the chipotle, honey and lime juice stir well until the chicken is coated. 💞Lightly toast the brioche buns. 💞Mix together the chipotle mayo.
