This is my great-grandmother Margi’s recipe from Smyrna. She was a brilliant cook, and her recipes are still alive in our family. I’m so happy to share them with you. Soutzoukakia from Smyrna (Meatballs in Tomato Sauce) Ingredients For the meat mixture: • 1 pound (500 g) ground meat (beef or beef/lamb mix) • 3 garlic cloves, minced • 1 egg • 1 1/4 cup (100 g) breadcrumbs or ground rusks • 1 tsp ground cumin • Salt & freshly ground pepper, to taste • 1/3 cup (80 ml) extra virgin olive oil (plus more for frying) • 1/4 cup (60 ml) cognac, white wine, or red wine For coating: • All-purpose flour For the sauce: • 3 garlic cloves, chopped  • Juice or pulp from 4–5 fresh tomatoes (grated or blended) • Salt & freshly ground pepper, to taste • ½ tsp ground cumin (for extra aroma) • A pinch of sugar • 1 cinnamon stick • Fresh parsley, chopped (for garnish) Preparation 1. Make the meat mixture In a large bowl, combine the ground meat, minced garlic, egg, breadcrumbs, cumin, salt, pepper, olive oil, and wine. Mix well until smooth. Cover with plastic wrap and refrigerate for 30 minutes. (Meanwhile, slice the garlic for the sauce and prepare the tomato juice.) 2. Shape and fry Shape the mixture into oval meatballs. Lightly coat each one with flour and fry in olive oil until golden brown. Set aside. 3. Prepare the tomato sauce In a pot, heat a little olive oil. Add the cumin, pepper, and immediately the sliced garlic. Sauté briefly for no more than 1 minute. Stir in the tomato juice, season with salt, add a pinch of sugar, and place in the cinnamon stick. Simmer gently until the sauce thickens, about 10 minutes. 4. Combine Add the fried soutzoukakia into the sauce and simmer together for 6–8 minutes so the flavors blend. Remove from the heat, sprinkle with chopped parsley, and serve immediately.
