Five pantry ingredients, and store-bought never compares again. Makes 12 medium tortillas or 10 large tortillas Ingredients 3 cups all-purpose flour @King Arthur Baking 1 1/2 tsp fine sea salt @redmondrealsalt 1 tsp baking powder 1 cup hot water 1/3 cup butter (or lard, olive oil, or coconut oil), room temperature and cut into small pieces Instructions Add flour, salt, and baking powder to a bowl and stir to combine. Stir in butter. Slowly mix in hot water, a little at a time, until a dough forms. Move dough to a lightly floured counter and knead for 1 to 2 minutes, until smooth. Cover with a kitchen towel and rest for 10 minutes. Divide dough into 12 pieces for medium 8-inch tortillas, or 10 pieces for larger 10-inch tortillas. Roll each into a ball. Lightly flour the counter and dough. Roll each ball into a paper-thin circle with a rolling pin or tortilla press. Heat a dry skillet over medium-high heat. Cook each tortilla for 30 to 60 seconds, flipping when bubbles form. Cook the other side about 30 seconds. Transfer to a plate or tortilla warmer and cover with a clean kitchen towel while you cook the rest. Store in an airtight bag in the fridge up to 5 days.
