TOFFEE: 1/2 cup white sugar 1/4 cup water COOKIE DOUGH: 10 tbsp butter, browned 1/4 cup tahini 1 cup brown sugar 1/2 cup white sugar 1 egg 1 egg yolk 1/2 tsp baking soda 1/2 tsp salt 2 cups plus 2 tbsp all purpose flour (mix of whole wheat flour nice too) 1 bar dark chocolate, chopped 1/2 cup semisweet chocolate chips Flaky salt, for topping . Preheat your oven to 325 degrees Fahrenheit. In a small sauce pan add the sugar and water. Turn the stove on medium heat, swirling the pan constantly until the caramel is bubbling and reaches a dark amber color. Pour the caramel onto a parchment lined 1/4 sheet tray and place in the freezer for 5-10 minutes until hard set. In a large bowl, whisk the browned butter, tahini, brown sugar, and white sugar. Whisk until smooth. Add vanilla, egg, and yolk. Whisk until smooth. Add baking soda, salt, and all purpose flour. Fold until a dough forms (if dough is too dry, add more tahini as needed it bring the dough together). Crack the toffee into small shards. Fold in toffee pieces, dark chocolate, and chocolate chips. Line sheet trays with parchment paper (bake 12 per tray— depending on how many cookies you need, freeze the dough scoops you don’t use now to bake more cookies later). Bake for 12-13 minutes or until golden brown on the edges. Tap the tray on a flat surface to slightly flatten the cookies when they come out of the oven.
