Rinse quinoa under cold water. In a pot, bring 2 cups water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork. 2. Heat olive oil in a large skillet over medium heat. Add minced garlic and turmeric, sauté for 1 minute. 3. Add cooked quinoa to the skillet. Stir well to combine with turmeric and garlic. 4. Add chopped spinach to the skillet. Cook for 2-3 minutes until wilted. 5. Stir in kimchi or sauerkraut. Cook for another 2 minutes to blend flavors. 6. Season with black pepper, chili flakes if using, and salt. Mix well. 7.
