All-in-One Chicken Over Rice w/ White Sauce & Salad 👩🏻‍🍳✨ Ingredients: About 5 boneless, skinless chicken thighs 1/4 cup yogurt 1/3 cup olive oil 4 garlic cloves, minced 1 tbsp Kashmiri chili powder 1/2 tbsp cumin 1/2 tbsp onion powder 1 tbsp paprika 1/2 tsp ground cloves 1/2 tsp cardamom 1/2 tsp cinnamon 1/2 tbsp oregano 1/2 tbsp black pepper 2 tsp salt White Sauce: 1 cup Greek yogurt 1/2 cup mayonnaise 1/3 cup fresh dill, chopped 3 garlic cloves, minced Juice of 1/2 lemon 1/2 tsp salt, then adjust to taste Yellow Rice: 2 tbsp butter 2 tbsp olive oil 1 tsp turmeric 1 tsp curry powder 1/2 tsp cardamom 1/2 tsp cinnamon 1/2 tsp ground cloves 2 cups basmati rice, soaked for 30 minutes and drained 2 bay leaves 2 tsp salt 1/2 tbsp black pepper About 3 cups water, or enough to sit about 1 inch above the rice Instructions: -In a bowl, combine the chicken thighs, yogurt, olive oil, garlic, and all of the seasonings. Mix well, then marinate for at least 30 minutes. -Heat 2 tbsp oil in a pan over medium-high heat. Add the chicken thighs and cook for about 5 minutes on each side, or until the internal temperature reaches 165°F. -Remove the chicken from the pan and set aside. Once cool enough to handle, dice the chicken and return it to the pan. -Add 1/2 tablespoon Kashmiri chili powder and toss until the chicken is fully coated, adding a little oil if needed. -In a bowl, combine the Greek yogurt, mayonnaise, dill, garlic, lemon juice, and salt. Mix well, then refrigerate until ready to serve. -In a pot over medium heat, add the butter and olive oil. Once melted, add the turmeric, curry powder, cardamom, cinnamon, and cloves. Cook for about 30 seconds, until fragrant. -Add the drained rice and toss it with the seasonings for about 1 minute. Pour in the water, then add the salt, black pepper, and bay leaves. -Turn the heat to high and bring to a boil. Once the water has reduced and is nearly level with the rice, reduce the heat to low, cover with a lid, and cook for about 15 minutes. Remove from the heat and let the rice sit covered for 5 minutes before fluffing.
