Just for fun I made it but didn’t have a full pint of heavy cream. Heavy cream 1 1/2 cups, sugar under 1/4 cup, 1/3 fresh squeezed lemon juice. It is very sweet so sugar could even be reduced more. Pretty sure that was an AI photo of them pouring the sugar.

Lemon posset. 1 cup sugar, two cups heavy whipping cream. Lemon zest from one lemon. Heat and stir until sugar dissolves. Remove from heat and add the juice from the lemon and chill. Easiest recipe ever, ten minutes and two hours chilling. Serve with fruit, cookie crumbs, whipped cream or all three. Makes six small ramekin servings. A favorite party treat, and great poured over my chilled cheesecake and cooled too!
