Since going vegan, I can honestly say I’ve never missed the turkey. This wellington remains a family fave even after 8 years vegan 🌱  Recipe: 2 cups lentils, rinsed 1 bay leaf 2 Tbs ground flax seeds 6 Tbs water  1 onion, diced  3 garlic cloves, minced 1 jalapeño diced  3 carrots, diced  3 stalks of celery, diced  8 oz box mushrooms, diced 2-3 Tbs ketchup 2-3 tbs tamari (alt: soy sauce, just reduce salt) 1 Tbs Worcestershire sauce  1 tsp liquid smoke  1/2 tsp each: thyme, oregano, ground fennel  1/4 cup peas 1/4 cup raisins, finely chopped  2/3 cup breadcrumbs (I prefer panko) 1 cup of nuts, blended/finely chopped (will make a hefty 1/2 cup once ground- I prefer 1/3 cup each of sunflower seeds, walnuts, and pecans)  1/2 tsp salt  1 sheet of puff pastry (Pepperidge farms is vegan) 2 Tbs vegan butter  1. Cook 2 cups of lentils in boiling water with a bay leaf for 20 minutes or until tender. Drain excess liquid.  2. Mix together flax seeds and water and set aside for about 5 minutes to let thicken.  3. In a large pan, sauté onion, jalapeño, garlic, carrots, and celery for 5-6 minutes.  4. Add in mushrooms, tamari, ketchup, liquid smoke, Worcestershire sauce, thyme, oregano, fennel. Cook for 1-2 minutes.  5. Add in peas & raisins. Cook for 2 minutes, until peas are not frozen.  6. In a large mixing bowl, slightly mash cooked lentils for a minute, being sure some stay in tact (you do not want lentil paste). Add breadcrumbs, flax mix, and nuts. Taste and add salt as preferred (may depend on your brand of tamari/soy sauce).  7. Mix until you get a hamburger-like texture. Add more breadcrumbs if necessary. 8. Form lentil loaf with half of the mix in the center of a sheet of puff pastry (recipe will make enough for two loaves).  9. On the sides of the puff pastry, cut 1 inch horizontal strips, leaving 1-2 inches in tact on each side of the loaf.  10. Gently pull each strip over the loaf, crossing as you go. When you get the bottom, cut any excess and gently tuck in the bottom piece.  11. Lightly brush with melted vegan butter.
