Cut in the cold butter until the mixture resembles coarse crumbs with some pea-sized pieces remaining. 3. Add the ice water gradually, mixing just until the dough comes together. 4. Divide into two discs, one slightly larger than the other. 5. Wrap and refrigerate for at least 1 hour. 6. Prepare the Filling Combine the cherries, sugar, cornstarch, lemon juice, vanilla, and cinnamon. Let stand for 10–15 minutes. 7. Roll the larger dough disc into a 32–34 cm (13-inch) circle and line a 26 cm (10-inch) pie dish. 8. Add the cherry filling, mounding it slightly in the center. 9. Dot with the butter pieces. 10. Roll out the second disc and cut into strips for a lattice top. Weave the lattice and crimp the edges. 10. Brush with the egg wash. 11. Bake at 425°F (220°C) for 15 minutes. Reduce heat to 375°F (190°C) and bake for 40–50 minutes more. If the crust browns too quickly, tent loosely with aluminum foil. How to Know It's Done The pie is ready when: the crust is deep golden brown; the filling is visibly bubbling through the lattice in several places. 12. Let cool for at least 4 hours, preferably 5–6 hours, before slicing. This allows the filling to set properly.
