My basket has been overflowing with lemons recently so I wanted to make something that would use up the whole fruit- juice and zest. When I try and think of inspiration, I'm usually led back to classic foods I grew up with- simple baking made in big batches so there's plenty to go round. This simple lemon drizzle cake is so easy and shows off lemons at their best. If you've got a fruit bowl of lemons going overripe, whip this up one afternoon and enjoy it for days to come 🍰 RECIPE Simple sponge cake (double this if you're making a large baking dish like mine) 8 oz self raising flour 8 oz butter 8 oz sugar 4 eggs Zest of 4 large lemons In a mixing bowl, cream the butter and sugar together until light and fluffy. Beat in the eggs, then fold in the flour and lemon zest. If it's a little thick, add the juice of 1 lemon. Add to a greased baking dish and bake at 180°C until golden and firm. Poke a few holes in the top of the cake and drizzle with lemon syrup (just the juice of your zested lemons mixed with some sugar and heated until the sugar has dissolved). You can leave it here, or top with some simple white icing (icing sugar and lemon juice) and sprinkle with lemon zest like I did.
