I rip it up (the edges get crispier) then I freeze. Then I boil it for 5 minutes in salted water, then I season and air fry!! I standdd by this method

A lot of pho restaurants use frozen tofu - it’s how they get that dryer texture in the broth so it’s not squishy

Different tofu brands have a different freezing result. The most common way is the chicken nuggets texture you have there

I usually just use medium firm tofu since it's cheaper, press it in a tofu press for maybe 10 minutes, then fry it up in different strip shapes. Works great every time! Not sure how freezing would really change anything, but neat idea.

It’s basically just the hack to not not having to press your tofu. You cal also freeze it thaw it and then freeze again and it works even better
